This recipe was given to me by my friend Nick DiNapoli, who had a restaurant at the Boardwalk called the Merry-Go-Round, I believe.

Trina, if you are reading this, please call and correct me. Later, he and his family owned and operated DiNapoli’s where Ristorante Italiano is now, in the basement of the old hospital building on Soquel Avenue. I ate there a lot--his salads were always fresh and delicious, and this was his house dressing. He shared it with me when I got ready to open the Spur, and it is a favorite with the customers.

As with any recipe, the person making it has editorialized over the years, but I will spell out the basic ingredients as they were first presented to me.

Silver Spur Tomato Vinaigrette

  • 1 cup olive oil
  • 1 cup red wine vinegar
  • 3 cloves minced garlic
  • 1 tsp dried basil
  • 2 cups ketchup
  • 1/4 cup grated parmesan cheese
  • salt optional

The ingredients get whisked together in a bowl. Couldn't be easier. Delicious especially on shrimp.
